We’ve been sourcing coffee from the Aponte Community since 2020, and this year we’re presenting a honey-processed lot that is sweeter than honey in the cup. It’s a coffee we’re currently drinking in large quantities at the roastery.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe Aponte Community is the result of a close collaboration between smallholder farmers in the remote Inga reserve and the cooperative Cooperativa Café de Altura in Buesaco. High up in the mountains of Nariño, several hours from the nearest town, the Inga community grows coffee under conditions that are both challenging and unique.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eFor many years, the community in Aponte has faced difficult circumstances, not least due to a geological fault line slowly moving through the village, affecting homes and infrastructure. Despite this, the farmers continue their work with remarkable resilience and a strong focus on quality. Agriculture is the backbone of the community, and coffee has become a key part of creating sustainable and legal livelihoods in the region.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAt farm level, coffee cherries are carefully hand-picked and processed immediately after harvest. Each producer has their own small processing station where the coffee is pulped, washed or honey-processed, and then dried on raised beds. This careful handling allows for a high level of control and results in a clean, balanced cup with clear sweetness and refined complexity.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe honey process has been introduced and developed in the area with support from the cooperative, and is now used alongside traditional washed processing. The result is coffees with greater depth and a richer flavor profile, while also reducing water usage.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWhen brewing this coffee, we prefer pour-over methods, using a ratio of 20 grams of coffee to 300 grams of water.
