Colombia Galeras Decaf is the second decaffeinated coffee Solde Kafferosteri has roasted for the world — and this time, it truly tastes great.

The first time we purchased 60 kg of decaffeinated green coffee from Colombia was about 12 years ago, when our friends at Le Chateaubriand in Paris were in need of decaf. To be completely honest, the flavor simply wasn’t there at the time. Now, 12 years later, we have a much better understanding of how to make decaf shine.

Colombia Galeras Decaf comes from the Nariño region and the cooperative Promotora Café de Altura, which has its office, cupping lab, and warehouse near the town of Buesaco. Here, the cooperative collects coffee from small-scale producers whose farms climb the surrounding hillsides. The cooperative works with more than 300 smallholders across the Nariño region, where coffee is typically harvested year-round. At the cooperative’s facilities, coffees are carefully analyzed, and farmers receive premiums above the market price based on quality. These incentives encourage high quality and sustainable farming practices, such as avoiding the use of glyphosate and other chemical inputs.

This decaffeinated coffee consists of small batches from farms located around the Galeras volcano. The coffee has been decaffeinated using the sugarcane process, also known as the Ethyl Acetate (EA) method.

You can now finally enjoy Solde coffee late in the evening — even if you’re sensitive to caffeine — without compromising your sleep quality.

We recommend brewing this coffee as a filter. Our current favorite recipe is 15 grams of coffee to 250 g of water using a Hario V60, with a brew time of around 3 minutes.

Note: Due to the sugarcane process, the beans appear visually darker despite being very lightly and gently roasted in our Diedrich IR-12.

Flavor Profile: Caramel, milk chocolate, lightly fruity.
